Peaches say one thing to me.
They encapsulate the fresh, sweetness of these glorious months we now find ourselves in.
The scent of these summer fruits wafting through the house is enough to put a smile on anybodies face. Not only that, but they are a delight to sink your teeth into, the flavours dancing around your mouth.
When it comes to pudding, I am massively in favour of something fruity and these juicy peaches are the perfect, easy to bake option that you can throw in the oven and then sit back, relax and unwind at the end of a hot, busy day.
And may so happen to be best enjoyed with a scoop or two of vanilla ice cream – definitely the best option. Alternatively, enjoy these bundles of goodness with some whipped up mascarpone cream.
To Serve 6
250 mls white wine
100 mls runny honey
1 tsp vanilla essence
1 cinnamon stick
1 sprig of thyme
1 tub of mascarpone – whipped up (or vanilla ice cream if you prefer)
Slice your peaches in half and remove the stone from the middle.
Place your peach halves cut side up in a baking dish just big enough to hold all the fruit neatly side by side.
In a mixing bowl/jug combine the wine, honey and vanilla essence and then pour over the peaches. Place the cinnamon stick in the middle of the dish and then sprinkle the leaves from a small sprig of thyme evenly over the fruit.
When softened to your liking, remove the peaches from the oven.
This next step is optional but I prefer the look and taste of a pan fried fruit so I add a knob of butter to a frying pan and once the butter is sizzling, add the fruit cut side down to the pan and cook for a minute or two until starting to golden.
Serve immediately with either whipped up mascarpone or scoops of ice cream and drizzle over some of the honeyed wine juices from the baking dish.
Absolutely delish! Just what summer ordered.
