I am not much of a breakfast fan. I rarely have it in fact. But on the odd occasion I do, mainly on a lazy Sunday morning, I like to do it properly! It doesn’t come any easier or any more tasty, than sumptuous, sweet eggy bread. Or should that be French toast? One and the same. The only difference I can see being is that French toast is usually eaten sweet and our eggy bread is usually savoury. I love this breakfast either way, but what better than to combine the two? Sweet, buttery, maple glazed French toast topped with salty bacon and a hashbrown. I know, you’re probably thinking ‘what on Earth?’ but don’t knock it till you try it! It works.
For two you’ll need:
125ml full fat milk
2 slices of bread
6 slices of streaky bacon
a knob of butter
a pinch of cinnamon
2-4 hash browns (depending on how hungry you are)
If you can, try and use the best ingredients you can. Fresh local eggs, milk, bread and meat honestly will make a difference if you can get your hands on them. But either way, I hope you will love this as much as I do!
Start by sticking your hash browns in the oven (follow instructions on packet) and getting your bacon cooking. Put your pan on a low heat, add bacon and allow to cook away slowly while you crack on with the eggs!
Crack your eggs into a bowl and mix thoroughly with the milk.
Find a bowl big enough to fit your bread in (or just use a plate) and pour half the egg/milk mixture over your bread and allow it to soak it up for 20 seconds or so. Add a knob of butter to a frying pan and put this on a medium heat. When the butter is starting to bubble, add your slice of bread. Allow this to fry away for a minute then turn the bread over and pour the remaining mixture left on your plate/bowl over the bread in the frying pan. You don’t want to waste it! Give this another minute then turn over for a second time and allow to cook until a nice golden colour. When your first slice of bread is done, put somewhere warm and while you repeat the process with the second slice.
By this time, your bacon and hash browns should be done.
So plate it all up, sprinkle over a pinch of cinnamon and make sure to drizzle with maple syrup. Lush!
